Cucumber Onion Salad
2 large cucumbers, peeled, seeded, and thinly sliced
1 large yellow onion thinly sliced
1 cup seasoned rice vinegar
2 Tbsp. toasted sesame oil
1 tsp. red pepper flakes
1/4 cup chopped cilantro
Combine all ingredients in a large bowl. Let sit for 30 minutes before serving. Add chopped cilantro. Makes a great anytime snack or as an accompaniment to Asian dishes.
