Serves 9 (2 1/2 inch bars)
This recipe is easy to mix and match. For variation you can use other dried fruit such as cranberries, blueberries, apricots in place of the raisins. Lemon peel and diced ginger are also interesting variations instead of the carrot and cinnamon.
1 tsp. cinnamon
1 carrot grated
6 – 10 almonds
1/2 cup unsweetened shredded coconut
1/3 cup soy flour or garbanzo/fava flour
1 cup oats (not instant)
1 Tbsp. flax seed
1 egg white
6 dates (pitted)
1 ripe banana, chopped
2 apple, peeled, cored and chopped
1/4 cup raisins
Preheat oven to 350°. Lightly oil an 8″ x 8″ square baking pan.
Combine cinnamon, grated carrot, almonds, coconut, flour, oats and flax seed in a food processor. Process about 20 seconds until coarse. Add egg white, dates, banana, apple and raisins to the food processor. Process for 30 seconds until the mixture is completely wet. Do not over-process.
Place into prepared baking pan. Mash down with your hands until all corners of the pan are filled and mixture is flat. Place in oven at 350°. Go for a 25 minute walk. Bake 25-30 minutes until golden brown and firm to the touch.
